The heat system, explained

The Classic Evo Pro is a single boiler machine. A single boiler stores one tank of hot water and uses it for both brewing and steaming — at different temperatures, so you brew first, then flip to steam mode and wait for the boiler to climb. The stored thermal mass gives steadier brew temperature than flow heaters once warmed up (a PID makes it properly stable), but the warm-up is real: the whole boiler and group need to come to temperature.

Temperature control note: There is no factory PID — classic thermostat — aftermarket PID kits are a rite of passage. Until you mod it or learn its rhythm, expect more shot-to-shot temperature drift than the PID machines in this database.
