The recipe's backbone number

A brew ratio is the simplest idea in espresso wearing the most jargon: grams of liquid out per gram of dry coffee in. An 18g dose pulled to 36g in the cup is a 1:2. The same dose stopped at 27g is a 1:1.5 ("ristretto" territory); run to 54g it's a 1:3 ("lungo"). That's the whole vocabulary — and because ratio is one of the three dial-in numbers, understanding what it does to the cup is what turns recipes from superstition into choices.

What ratio actually changes

Two things move together as the ratio stretches. Concentration falls: more water through the same coffee means a less intense, thinner-bodied cup — a 1:1.5 is syrup, a 1:3 approaches strong-coffee territory. Extraction rises: the longer the water flows, the more it dissolves from the grounds — which shifts flavor along the same sour→sweet→bitter arc as grind does (the taste map). So short ratios are intense but risk under-extraction (sour syrup); long ratios are complete but risk over-extraction (bitter water). The 1:2 normale is the standard because it sits in the friendly middle of both curves — intensity with completeness, the sensible home base.

The practical mental model: ratio sets the style; grind tunes the extraction within it. Pick the ratio for the cup you want, then dial grind until that ratio tastes right.

When to reach for each

1:1.5–1:1.8 (ristretto): maximum body and intensity — the choice for milk drinks that need to punch through steamed milk (the milk-drinks context), and for darker roasts whose bitterness arrives early (shorter ratio, less of it extracted). Grind must go coarser than your 1:2 setting or the short shot turns sour — the classic ristretto mistake.

1:2 (normale): the default for a reason — balanced, forgiving, the ratio every machine guide and recipe assumes unless stated, from the Bambino Plus up. Dial here first, always; deviations mean more when you know what the bean does at home base.

1:2.5–1:3 (lungo): clarity and gentleness — modern light roasts often want the longer ratio, which extracts their sweetness fully and tames intensity into something tea-adjacent and articulate. Reading your shots through the ratio lens

Two diagnostics get easier with ratios in hand. "My milk drinks taste lost" — the milk won; shorten the ratio toward 1:1.5 for concentration that survives steaming. "This light roast is sour at every grind" — at 1:2 you may be running out of grinder; stretch to 1:2.5 and let water do extraction work the burrs can't (dialing new beans uses this move). The inverse holds too: a dark roast bitter everywhere often sweetens at 1:1.8 before any grind change.

One bookkeeping note: changing ratio means re-dialing grind — they're coupled, which is why the dial-in routine locks ratio first. Change one, then tune the other; never both in one shot.
